Ingredients
- Blueberry compote as required
- 1½ cups cream cheese
- ¾ cup condensed milk
- 2 cups whipped cream
- 8-10 digestive biscuits
Method
- Take cream cheese in a bowl, add condensed milk and beat with an electric hand blender till light and fluffy.
- Add whipped cream and mix with light hands.
- Put the digestive biscuits in a zip lock bag and crush coarsely with a rolling pin.
- Take an airtight container, add a portion of cream cheese mixture and a portion of blueberry compote and swirl with a small stick to create marble effect. Sprinkle a portion of biscuit crumbs and repeat these layers till all the mixtures are used up.
- Close the lid, keep the container in the freezer to freeze for 6-8 hours.
- Scoop out the ice cream and put into a serving bowl and serve chilled.
