Blueberry Cheesecake Ice Cream

Ingredients

Method

  1. Take cream cheese in a bowl, add condensed milk and beat with an electric hand blender till light and fluffy.
  2. Add whipped cream and mix with light hands.
  3. Put the digestive biscuits in a zip lock bag and crush coarsely with a rolling pin.
  4. Take an airtight container, add a portion of cream cheese mixture and a portion of blueberry compote and swirl with a small stick to create marble effect. Sprinkle a  portion of biscuit crumbs and repeat these layers till all the mixtures are used up.
  5. Close the lid, keep the container in the freezer to freeze for 6-8 hours.
  6. Scoop out the ice cream and put into a serving bowl and serve chilled.
