Ingredients
- 1 medium broccoli, separated into medium sized florets
- 10-15 Pro V Select California Whole Natural Almonds
- 2 tablespoons olive oil
- 1 tablespoon chopped garlic
- 2 medium white onions, chopped
- Salt to taste
- Crushed black peppercorns to taste
- 2 cups vegetable stock
- Fresh cream to drizzle
Method
- Heat olive oil in a non-stick pan, add garlic and sauté for 30 seconds.
- Add white onions, mix and sauté till onions are translucent.
- Add Pro V Select California Whole Natural Almonds, mix and sauté for 2-3 minutes.
- Add broccoli, salt and crushed black peppercorns, mix and sauté for 2-3 minutes.
- Add vegetable stock, mix well, cover and cook for 6-8 minutes.
- Transfer into a bowl and grind to fine mixture with a hand blender.
- Strain through a fine strainer into the same pan and let the mixture come to a boil.
- Transfer into a serving bowl, drizzle fresh cream, sprinkle crushed black peppercorns and serve hot.
