Ingredients
- 1 sourdough bread loaf
- Olive oil for drizzling
- 1 avocado
- ½ lemon
- Toast 1
- ¼ cup creamy peanut butter
- 1 ripe banana
- Dark chocolate chips for toppings
- Toast 2
- ¼ cup cream cheese
- ¼ cup mixed fresh berries (strawberry wedges and blueberries)
- 8-10 toasted pistachios
- Honey for drizzling
- Fresh mint leaves for garnish

- ¼ cup boiled and mashed kidney beans (rajma)
- 2 tablespoons ready-made salsa
- Sour cream to serve
- Micro greens for garnish
- Olive oil for drizzling

- 1 soft boiled egg, peeled
- Salt to taste
- Crushed black peppercorns to taste

Method
- Cut the sourdough bread loaf into 8 thick slices. Halve cherry tomatoes.
- Halve avocado, remove the seed and scoop out the flesh from both halves with a spoon. Thinly slice flesh of one half and let the remaining half as is. Squeeze the juice of half a lemon over them to prevent discolouration.
- Heat a non-stick tawa, place the bread slices on it and toast, turning sides. Drizzle some olive oil over them and continue to toast till both sides are evenly golden and crisp.
- To make one portion of toast 1, apply peanut butter generously over 1 toasted bread slice.
Peel the banana and thinly slice it into roundels. Arrange some banana roundels over the peanut butter. - Arrange some chocolate chips and place it on a serving platter.
- To make toast 2, apply cream cheese generously over another toasted bread slice. Arrange strawberries and blue berries over it. Garnish with toasted pistachios and some fresh mint leaves. Drizzle some honey and place it on the same serving platter.
- To make toast 3, spread mashed kidney beans generously over yet another toasted bread slice, place a few avocado slices on side and salsa on the other side. Drop a dollop of sour cream between the two. Garnish with micro greens, drizzle some olive oil, and sprinkle salt and crushed black peppercorns over the avocado slices. Place it on the same serving platter as well.
- To make toast 4, cut the remaining avocado half into two pieces and keep 1 piece over yet another toast. Mash the flesh with a fork on both the toasts.
- Quarter the egg vertically and place 2 pieces over it Sprinkle some salt, crushed black peppercorns, place some cherry tomato halves and drizzle a little olive oil and garnish with micro greens. Place it on the same serving platter.
- Similarly prepare one more platter of toasts and serve immediately.
