Carrot Salad With Raisins, Nuts And Sour Cream

A refreshing carrot salad with raisins, peanuts, and a tangy lemon-sour cream dressing. Make this with red carrots when they are in season. This is Sanjeev Kapoor exclusive recipe.

Ingredients

  • 4 large carrots
  • ½ cup seedless raisins (kishmish)
  • ½ cup peanuts, coarsely crushed
  • Salt to taste
  • 5-6 black peppercorns, freshly crushed
  • 2 teaspoons grated lemon rind
  • 1 tablespoon lemon juice
  • 1 cup sour cream 

Method

  1. Place the carrots on ice for one hour. Grate them coarsely into a bowl.
  2. Add the raisins and peanuts and mix lightly. 
  3. Sprinkle salt, peppercorns, lemon rind and lemon juice over the ingredients. Toss once or twice to mix.
  4. Pour the sour cream over and serve immediately.
