Ingredients list for Vegetables In Thai Red Curry

  • 1 medium Carrot diagonally sliced
  • 10-12 Red Curry Paste diagonally sliced
  • 10-12 Button mushrooms halved
  • 5-6 French beans cut into 1/2 inch pieces
  • 1 tablespoon Red curry paste
  • 2 tablespoons Oil
  • 2 medium Onions
  • 1 medium Tomato
  • to taste Salt
  • 50 grams Firm beancurd (tofu)
  • 1 cup Coconut milk
  • 5-6 florets Broccoli

Method

  1. Heat oil in a non stick wok. Chop onions roughly and add. Add red curry paste and saute.
  2. Chop tomato and add. Add carrot, baby corns and mix. Add mushrooms and mix. Cover and cook 3-4 minutes.
  3. Add French beans, salt and mix. Cube tofu and add along with coconut milk and broccoli and mix. Cook for 2-3 minutes.
  4. Transfer into a serving bowl and serve hot with steamed rice.
