Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Vegetable Cheesy Bake - SK Khazana Recipe

  • Potatoes cut into small cubes 2 small

  • Carrot cut into small cubes 1 small

  • Broccoli florets 1/2 cup

  • Green peas 1/2 cup

  • French beans finely chopped 8-10

  • Button mushrooms chopped 8-10

  • Sweet corn kernels 1/4 cup

  • Processed cheese grated 1 cup

  • Cheddar cheese 25 glass

  • Olive oil 1 tablespoon

  • Garlic 1 tablespoon

  • Onions finely chopped 2 medium

  • Salt to taste

  • Black pepper powder to taste

  • Fresh thyme 1 sprig

  • White Sauce 3/4 cup

  • Bread crumbs dried 3/4 cup

Method

Step 1

Preheat the oven to 180°C.

Step 2

Heat oil in a non-stick wok, add garlic and onion, mix and sauté till translucent. Add potatoes and carrot, mix well and saute for 2 minutes.

Step 3

Add broccoli, green peas and French beans, mix well and saute for 1 minute. Add mushrooms and mix well. Add salt and black pepper powder and toss well. Separate the leaves of thyme and add into the wok and mix well.

Step 4

Add white sauce and mix well. Add sweet corn kernels, and mix well. Add ½ cup grated processed cheese and mix, cook for 1 minute.

Step 5

Transfer into a baking dish and spread it evenly. Sprinkle dried breadcrumbs on top. Sprinkle remaining processed cheese and grate cheddar cheese on top. Keep the baking dish in the preheated oven and bake for 10-12 minutes.

Step 6

Serve hot.
