Vegetable Cheesy Bake

Mixed vegetables mixed with white sauce and cheese and baked to perfection. Serve this hot with crispy garlic bread or on its own. This is a Sanjeev Kapoor exclusive recipe.

Vegetable Cheesy Bake

  • 2 small potatoes, cut into small cubes
  • 1 small carrot, cut into small cubes
  • 1/2 cup broccoli florets
  • 1/2 cup green peas
  • 8-10 French beans, finely chopped
  • 8-10 button mushrooms chopped
  • 1/4 cup sweet corn kernels
  • 1 cup grated processed cheese 
  • 25 grams cheddar cheese
  • 1 tablespoon olive oil
  • 1 tablespoon chopped garlic
  • 2 medium onions, finely chopped
  • Salt to taste
  • Black pepper powder to taste
  • 1 sprig of fresh thyme 
  • 3/4 cup white Sauce
  • 3/4 cup dried bread crumbs 


  1. Preheat the oven to 180°C.
  2. Heat oil in a non-stick wok, add garlic and onion, mix and sauté till translucent. Add potatoes and carrot, mix well and saute for 2 minutes.
  3. Add broccoli, green peas and French beans, mix well and saute for 1 minute. Add mushrooms and mix well. Add salt and black pepper powder and toss well. Separate the leaves of thyme and add into the wok and mix well.
  4. Add white sauce and mix well. Add sweet corn kernels, and mix well. Add ½ cup grated processed cheese and mix, cook for 1 minute.
  5. Transfer into a baking dish and spread it evenly. Sprinkle dried breadcrumbs on top. Sprinkle remaining processed cheese and grate cheddar cheese on top. Keep the baking dish in the preheated oven and bake for 10-12 minutes.
  6. Serve hot.
