Ingredients
- 2 cups boiled noodles ,
- 5-6 button mushrooms , quartered
- 3-4 babycorn , diagonally sliced and blanched
- 1/4 cup mixed capsicum (red, green and yellow) diamonds
- 1 medium onion , thickly sliced
- 1 tablespoon sesame oil (til oil)
- 4-5 garlic cloves , sliced
- 1 inch ginger , finely chopped
- 2-3 spring onion bulbs , sliced
- Salt to taste
- 1 teaspoon soy sauce
- 1 tablespoon red chilli sauce
- 1 teaspoon vinegar
- 1 teaspoon toasted sesame seeds (til) , to garnish
- Diagonally sliced spring onion greens , for garnish
Method
- Heat sesame oil in a non-stick pan, add garlic, ginger and spring onion bulbs, mix and sauté for 1 minute.
- Add mushrooms and babycorn, mix and sauté for 1 minute. Add salt and mix. Add mixed capsicums diamonds and onion, mix and sauté for 1 minute.
- Add noodles, soy sauce, red chilli sauce and salt, mix and cook for 2 minutes. Add vinegar and 1 teaspoon sesame seeds and mix well.
- Transfer onto a serving platter, garnish with spring onion greens and sesame seeds and serve hot.
