You can’t eat breakfast at night or dinner in the afternoon – but snacks? that you can eat anytime of the day! Along with tea, after school or at a birthday party – snacks are every foodie’s ultimate favourite. Healthy snacking is the best way to satisfy your munchies without the worry of to many added calories.

Ingredients for Vanjaram Vepudu Recipe

  • Surmai (king fish) 8 slices

  • Curry leaves 12-16

  • Red chilli powder 1 teaspoon

  • Cumin powder 1/2 teaspoon

  • Coriander powder 2 teaspoons

  • Ginger-garlic paste 1 1/2 teaspoons

  • Lemon juice 2 teaspoons

  • Salt to taste

  • Oil 2 teaspoon

  • Turmeric powder 1/2 teaspoon

Method

Step 1

Combine turmeric powder, red chilli powder, roasted cumin powder, coriander powder, ginger-garlic paste, lemon juice, salt and 2 tsps oil in a bowl.

Step 2

Chop 4-6 curry leaves and mix. Apply this mixture to the fish pieces and keep them in a refrigerator to marinate for 10 minutes.

Step 3

Heat sufficient oil in a non-stick pan. Keep the fish pieces in it in a single layer. Shallow fry, turning sides, a few times to ensure even cooking.

Step 4

Add the remaining curry leaves and cook till both sides of the fish are golden and crisp. Drain on absorbent paper and serve hot.
