Ingredients list for Tomato and Egg Stir Fry

  • 3-4 medium Tomatoes
  • 3 Eggs
  • 1 tablespoon Oil
  • 3 Spring onions with greens
  • 2 Green chillies
  • to taste Salt
  • 1 tablespoon Soy sauce
  • 1 tablespoon Sweet chilli sauce
  • a few Yellow bell pepper curls, for garnishing
  • for garnishing Fresh coriander sprigs

Method

  1. Heat oil in a non-stick pan.
  2. Slice spring onion bulbs reserving the greens.
  3. Add these onions to hot oil and sauté till golden.
  4. Diagonally slice green chillies, add to the pan, mix and cook for a minute.
  5. Cut tomatoes, add to the pan and toss. Add salt and soy sauce, mix and cook for a minute.
  6. Chop spring onion greens.
  7. Break eggs into a bowl and beat well. Add sweet-chilli sauce, beat again, add to the pan and mix well.
  8. Add spring onion greens and mix.
  9. Serve hot garnished with bell pepper curls and a coriander sprig.
