Tomato Basil Sandwich

Fresh tomatoes and basil steeped in olive oil make this sandwich a flavour-packed favourite. Finished with cheese spread and cut into fingers for easy, tasty eating. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 3 medium tomatoes washed
  • 15-20 fresh basil leaves
  • 4 slices brown bread
  • 4 white bread
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 tablespoon extra virgin olive oil
  • Butter for applying
  • Cheese spread for applying
  • Tomato ketchup to serve

Method

  1. Cut the tomatoes into thin slices. Chop the basil leaves. Put both of them in a bowl.
  2. Add salt, black pepper powder and extra virgin olive oil and mix well. Set aside for 10 minutes.
  3. For each sandwich, place a brown bread slice and a white bread slice on a worktop. Apply a little butter on both slices. Apply cheese spread on a brown bread slice, place tomato slices on it, and cover with the white bread slice. Trim the edges of the sandwich and cut into 3 fingers each.
  4. Keep them on a serving platter and serve immediately with tomato ketchup.
