Ingredients list for Thai Vegetables In Lettuce Leaf
- 8 leaves Iceberg lettuce
- 1 medium Carrot
- 2 medium Zucchinis thinly sliced
- 1 medium Red capsicum thin strips
- 8 Fresh button mushrooms thinly sliced
- 1 cup Bean sprouts
- to taste Salt
- 1 teaspoon Sugar
- 2 tablespoons Lemon juice
- 1 tablespoon Light soy sauce
- 1 teaspoon Sweet chilli sauce
- 1/4 cup Roasted peanuts crushed
- 8 Spring onions with greens diagonally sliced
Method
- Mix spring onions with greens, mushrooms, zucchini, red capsicum, carrot and bean sprouts in a bowl.
- Add salt, sugar, lemon juice, soy sauce, sweet chilli sauce and peanuts.
- Shape each iceberg lettuce leaf into a cup and arrange the salad in them.
- Serve immediately.
