How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Thai Fried Rice - SK Khazana Recipe

  • Rice cooked 3 cups

  • Boneless chicken cut into strips 200 grams

  • Oil 2 tablespoons

  • Garlic finely chopped 1 tablespoon

  • Fresh red chillies sliced 1-2

  • Egg 1

  • Medium carrot finely chopped 1

  • Spring onion bulbs sliced 3-4

  • Cherry tomatoes halved 4-5

  • Spring onion greens sliced 1 tablespo for garnish

  • Stock cube crushed 1

  • Salt to taste

  • Sugar a pinch

  • Pak choi 5-6

  • Fish sauce 1/2 teaspoon

  • Soy sauce 1 teaspoon

  • Oyster sauce 1 teaspoon

Method

Step 1

Heat oil in a non-stick pan, add chicken and sauté for a minute. Add garlic and red chillies and sauté well. Add egg and mix well.

Step 2

Add carrot, spring onion bulbs, cherry tomatoes and spring onion greens and mix well. Add crushed stock cube, salt, sugar and some water and mix well.

Step 3

Add torn pak choi and mix. Add rice, fish sauce, soy sauce and oyster sauce, mix well and cook for a minute. Adjust salt, if required.

Step 4

Garnish with spring onions and serve hot.
