Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for TOMATO NACHOS - skk Recipe

  • Fresh tomato puree 1/2 cup

  • Maize flour (makai ka atta) 1 cup

  • Refined flour (maida) 1 cup

  • Salt to taste

  • Black peppercorns crushed to taste

  • Oil for greasi to deep fry

  • Pineapple salsa

  • Pineapple finely chopped 1 cup

  • Medium onion finely chopped 1

  • Fresh coriander leaves chopped 2 tablespoons

  • Green chillies finely chopped 1-2

  • Red chilli powder 1 teaspoon

  • Salt to taste

  • Black peppercorns cruhsed to taste

  • Tabasco sauce 1/2 teaspoon

  • Lemon juice 1 tablespoon


Step 1

To make tomato nachos, take maize flour in a bowl, add refined flour, salt, crushed peppercorns, tomato puree and mix well. Add sufficient warm water and knead into stiff dough. Cover with a damp cloth and set aside for 10-15 minutes

Step 2

Divide the dough into equal portions and shape them into balls. Drizzle a little oil on a worktop and roll out each portion into thin sheets.

Step 3

Prick the sheets all over with a fork, trim the edges to straighten them and cut into triangles with a pizza cutter.

Step 4

Heat sufficient oil in a wok. Slide in these dough triangles into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.

Step 5

To make pineapple salsa, take pineapple in a bowl, add onion, coriander leaves, green chillies, red chilli powder, salt, black peppercorns, Tabasco sauce and lemon juice and mix well.

Step 6

Transfer the nachos in a serving plate and salsa into a serving bowl and serve immediately.
