Ingredients list for Sweet and Sour Prawns
- 8-10 Prawns (medium) shelled and deveined with tails intact
- ¾ cup Tomato ketchup
- to taste Salt
- to taste Crushed white peppercorns
- 1½ teaspoons Red chilli paste
- to shallow fry Oil 1 tablespoon +
- 1 tablespoon Cornflour/ corn starch
- 1 tablespoon Garlic chopped
- 1 tablespoon Ginger chopped
- ½ teaspoon Celery chopped
- 4-5 Spring onion bulbs halved
- 1 medium Green capsicum cut into small triangles
- 2½ teaspoons Vinegar
- for garnishing Spring onion greens chopped, 2 tablespoons +
Method
- Put prawns with salt, crushed peppercorns and ½ teaspoon red chilli paste in a bowl, mix and set aside to marinate for 10-15 minutes.
- Heat sufficient oil in a non-stick pan to shallow-fry.
- Add cornflour to marinated prawns and mix well. Shallow-fry the prawns in hot oil till golden.
- Heat 1 tablespoon oil in another non-stick wok. Add garlic, ginger and celery and sauté well.
- Add remaining red chilli paste and mix well. Add spring onion bulbs and capsicum and sauté.
- Add ¼ cup water, salt, crushed peppercorns and tomato ketchup, mix well and cook till the sauce thickens.
- Add fried prawns, mix well. Add vinegar, mix well and cook for 2 minutes.
- Switch off heat, add 2 tablespoons spring onion greens and mix well.
- Serve hot garnished with spring onion greens.
