Ingredients list for Spinach Feta Samosa

  • 2 medium Spinach leaves blanched and chopped
  • 1/2 cup Crumbled feta cheese
  • 8-10 Samosa pattis
  • 2 tablespoons Butter
  • 1 tablespoon Garlic chopped
  • 1 medium Onion chopped
  • 3-4 Sprigs of thyme
  • 1 teaspoon Red chilli flakes
  • to taste Salt
  • 2 tablespoons Raisins
  • 2 tablespoons Cashewnuts chopped
  • 2 tablespoons Refined flour (maida)

Method

  1. Preheat oven to 180º C.
  2. Heat butter in a non-stick pan, add garlic and onion and sauté till onion turns translucent.
  3. Add spinach leaves and sauté for a minute. Add thyme, red chilli flakes and salt, mix well and sauté for a minute.
  4. Add raisins and cashewnuts and mix well. Remove from heat and cool down to room temperature. Add feta cheese and mix well.
  5. Take the flour in a bowl, add sufficient water and mix well into a thick paste.
  6. Place each samosa patti on the worktop and rub it lightly with the flour paste. Place a small portion of the spinach-cheese mixture at one end and fold into a triangular samosa. Seal the edges by applying the flour paste and then pressing gently.
  7. Place samosas on a baking tray, keep the tray in the preheated oven and bake for eight to ten minutes, turning them a few times.
  8. Serve hot with tomato ketchup or green chutney.
