When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Scallion Cheesy Chicken Recipe

  • Boneless chicken breasts cut into butterfly 4

  • Mozzarella cheese cut into thin fingers 100 grams

  • Spring onions with greens finely chopped 2

  • Crushed black peppercorns to taste

  • Salt to taste

  • Garlic cloves finely chopped 6-8

  • Light soy sauce 3 tablespoons

  • Red chilli flakes 2 teaspoons

  • Fresh coriander leaves chopped 2 tablespoons

  • Oil 2 tablespoons

  • Eggs 2

  • Refined flour (maida) for dusting

  • Panko for coating


Step 1

Place chicken breasts on the worktop. Sprinkle some crushed peppercorns and salt on top and rub in well.

Step 2

Mix together spring onion with greens, garlic, soy sauce, chilli flakes, coriander leaves, salt and crushed peppercorns in a bowl.

Step 3

Heat oil in a non-stick pan till it smokes. Pour it into the bowl and mix well.

Step 4

Add chicken breasts and mix well. Set aside for ten to fifteen minutes.

Step 5

Preheat oven to 200º C.

Step 6

Place mozzarella cheese on each chicken breast and roll tightly folding the edges.

Step 7

Break eggs in another bowl. Spread flour and panko in two different plates.

Step 8

Dust the chicken with the flour, dip in the beaten eggs and coat with the panko.

Step 9

Place the chicken on a baking tray, place the tray in the preheated oven and bake for fifteen to twenty minutes.

Step 10

Serve hot.
