Ingredients list for Scallion Cheesy Chicken
- 4 Boneless chicken breasts cut into butterfly
- 100 grams Mozzarella cheese cut into thin fingers
- 2 Spring onions with greens finely chopped
- to taste Crushed black peppercorns
- to taste Salt
- 6-8 Garlic cloves finely chopped
- 3 tablespoons Light soy sauce
- 2 teaspoons Red chilli flakes
- 2 tablespoons Fresh coriander leaves chopped
- 2 tablespoons Oil
- 2 Eggs
- for dusting Refined flour (maida)
- for coating Panko
Method
- Place chicken breasts on the worktop. Sprinkle some crushed peppercorns and salt on top and rub in well.
- Mix together spring onion with greens, garlic, soy sauce, chilli flakes, coriander leaves, salt and crushed peppercorns in a bowl.
- Heat oil in a non-stick pan till it smokes. Pour it into the bowl and mix well.
- Add chicken breasts and mix well. Set aside for ten to fifteen minutes.
- Preheat oven to 200º C.
- Place mozzarella cheese on each chicken breast and roll tightly folding the edges.
- Break eggs in another bowl. Spread flour and panko in two different plates.
- Dust the chicken with the flour, dip in the beaten eggs and coat with the panko.
- Place the chicken on a baking tray, place the tray in the preheated oven and bake for fifteen to twenty minutes.
- Serve hot.
