Ingredients list for Sausage and Sweetcorn Fritters

  • 8-10 Chicken sausage cut into ½ inch cubes
  • 1 cup American corn kernels boiled and crushed
  • 1/4 cup Refined flour (maida)
  • 1 teaspoon Baking powder
  • to taste Salt
  • 1 Egg
  • 3 tablespoons Milk
  • 3 tablespoons Thai red curry paste
  • 1/4 cup Spring onions with greens chopped
  • 2 tablespoons Fresh coriander leaves chopped
  • for deep-frying Oil

Method

  1. Mix refined flour, baking powder, salt, egg and milk in a bowl and whisk well to a thick and smooth batter. Add red curry paste and mix well.
  2. Mix corn kernels, spring onions with greens, coriander leaves and sausages in another bowl.
  3. Pour the batter on the corn-sausage mixture, mix well.
  4. Heat sufficient oil in a kadai. Drop tablespoons full of the mixture into hot oil and deep-fry the fritters till golden. Drain on absorbent paper.
  5. Serve hot.
