Ingredients list for Sarson Saag Chicken

  • 750 grams Chicken cut into 8 pieces on bone
  • 1 cup Spinach puree blanched
  • 2 tablespoons Filtered mustard oil (sarson ka tel)
  • 1 teaspoon Mustard seeds
  • 1 1/2 inches Ginger
  • 8-9 Garlic cloves
  • 5 Green chillies
  • 5 tablespoons Yogurt
  • 1 1/2 tablespoons Gram flour (besan)
  • 1 inch Cinnamon
  • 10-12 Cloves
  • 1 teaspoon Cumin seeds
  • to taste Salt

Method

  1. Heat mustard oil in a non-stick pan till it reaches smoking point.
  2. Roughly chop ginger and put in a grinder jar. Add garlic cloves, roughly chopped green chillies, mustard seeds, yogurt, gram flour and 4-5 tbsps water and grind into a smooth paste.
  3. Reduce heat, add cinnamon, cloves and cumin seeds to the pan and sauté for ½ minute. Add chicken pieces and salt and mix well. Cover and cook for 3-4 minutes.
  4. Add ground paste, mix well, cover and cook for 2-3 minutes.
  5. Add spinach puree, mix well, cover and cook till the chicken is fully cooked.
  6. Transfer into a serving bowl and serve hot.
