How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Saat Dhaan Ki Khichdi Recipe

  • Rice soaked 3/4 cup

  • Green Chana 2 tablespoons

  • Whole green grams (sabut moong) soaked 2 tablespoons

  • Toovar dana 2 tablespoons

  • Split pigeon pea (toor dal/arhar dal) soaked 2 tablespoons

  • Split green gram skinless (dhuli moong dal) soaked 2 tablespoons

  • Fresh broad bean seeds (leelva) 2 tablespoons

  • Pure ghee 4 tablespoons

  • Asafoetida a pinch

  • Cloves 3-4

  • Black peppercorns 5-6

  • Cinnamon 1 inch stick

  • Cumin seeds 1/2 teaspoon

  • Onions thinly sliced 2 medium

  • Green chillies broken 2

  • Salt to taste

Method

Step 1

Heat pure ghee in a pan. Add asafoetida, cloves, black peppercorns, cinnamon, cumin seeds, sliced onions and sauté. Add green chillies and continue to sauté for two to three minutes.

Step 2

Add drained hara chana, sabut moong, toovar dana, toovar dal, dhuli moong dal, papdi dana and sauté. Add drained rice, salt and five cups of water.

Step 3

When it comes to a boil, cover, reduce heat and cook till done, stirring occasionally. Serve hot.
