By Sanjeev Kapoor 22 Feb 2016 in Recipes Veg New Update Main Ingredients Basmati Rice, Sugar Cuisine Maharashtrian Course Desserts Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Saakhar Bhaat 1 cup Basmati Rice 1 cup Sugar 2 tablespoons Ghee 4 Cloves 1/2 cup Water a few strands Saffron (kesar) 2 tablespoons Milk 1/4 teaspoon Green cardamom powder 10 grams Almonds 10 grams Raisins Method Pick basmati rice, wash well with plenty of water. Soak in water for 30 minutes, drain and leave aside. Dissolve saffron in hot milk and keep aside. Soak almonds in hot water for 5 minutes. Remove from water, peel off the skin and then chop. Wash raisins and then chop. Heat ghee in a thick-bottomed pan, add cloves and cook for a moment. Add basmati rice, stir it for half a minute, add 2 cups water. Bring to a boil and cook on low heat till almost all the water is absorbed. Lower the heat and cook till rice is cooked. Remove from heat. Spread cooked rice on a large platter to cool. Mix sugar and water in a vessel and bring to a boil to prepare sugar syrup. Add green cardamom powder, cooked rice, saffron and half the quantity of almonds and raisins. Mix gently. Lower heat, cover the pot and allow to cook for 3-4 minutes. Remove from heat and serve immediately garnished with remaining almonds and raisins.
