Ingredients list for Russian Salad Sandwich

  • 7-8 French beans blanched
  • 1 Large potato boiled and peeled
  • 1 Large red apple
  • 1/4 cup Green peas boiled
  • 1/4 cup Carrot grated
  • 1 tablespoon Lemon juice
  • to taste Black peppercorns crushed
  • 1/4 cup Mayonnaise
  • 1/4 cup Yogurt
  • 1/4 cup Fresh cream
  • 1 teaspoon Mustard sauce
  • 4 Bagels
  • as required Butter melted
  • as required Iceberg lettuce leaves

Method

  1. Chop French beans, cut potato and apple into small cubes. Transfer these into a large bowl. Add green peas and carrot.
  2. Add lemon juice, crushed black peppercorns, mayonnaise, yogurt and cream and mix well. Add mustard sauce and mix well.
  3. Heat some butter in a grill pan. Halve the bagels horizontally, place them in the grill pan and toast, turning sides, till grill marks appear.
  4. Transfer the bagels onto the worktop. Place torn lettuce leaves over the base half of all the buns. Spread the Russian salad over the lettuce leaves and top them with the top halves of all the buns.
  5. Keep them on a serving plate and serve immediately with an accompaniment of your choice.
