Romesco Sauce

Traditional Spanish Tomato Sauce. A robust sauce made from tomatoes, garlic and bread slices. All the ingredients are roasted and the ground with olive oil. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 kilogram tomatoes
  • 30 grams garlic
  • 90 grams hazelnuts
  • 90 grams almonds
  • 2 white bread slices
  • 10 grams paprika
  • 375 mililitres red wine vinegar
  • 850 mililitres extra virgin olive oil
  • Salt to taste

Method

  1. Cut the tomatoes and onions into halves.
  2. Roast the tomato, onion, almonds, hazelnuts, bread slices and garlic together at 200 degree for 30 minutes.
  3. Remove and blend with smoked Spanish paprika, red wine vinegar and extra virgin olive oil to smooth paste consistency. Season with salt.
