Ingredients list for Raw Banana and Sweet Potato Pav Bhaji
- 2 Medium raw bananas boiled, peeled and grated
- 2 Medium sweet potatoes boiled, peeled and mashed
- 8 Pav
- 2 tablespoons Ghee
- 1 teaspoon Cumin seeds
- 1 inches Ginger grated
- 2 Medium tomatoes chopped
- 1 sachet ( Tata Sampann Pav Bhaji Masala
- 1/2 cup Tomato puree
- to taste Salt
- 1 Medium green capsicum finely chopped
- 2 tablespo For topping Butter
- 1 teaspoon Lemon juice
- 2 tablespoons Fresh coriander leaves chopped
- for garnish Fresh coriander sprig
Method
- Heat ghee in a non-stick pan. Add cumin seeds and sauté till the seeds change colour.
- Add ginger and sauté well. Add tomatoes, mix well and cook for 2-3 minutes. Add Tata Sampann Pav Bhaji Masala, mix well and sauté for a minute.
- Add tomato puree and mix well. Add raw bananas, sweet potatoes, salt and mix well.
- Add 2½ cups water, stir, cover and cook for 5-6 minutes. Add capsicum, 2 tablespoons butter, lemon juice and mix. Add coriander leaves and mix well.
- Transfer in a serving bowl. Top with a dollop of butter, garnish with coriander sprig and serve hot with pav.
