Ingredients
- 1 cup quinoa
- 1 medium tomato, chopped
- 1 medium green bell pepper, chopped
- 1 medium cucumber, peeled and roughly chopped
- 1 tablespoon chopped fresh coriander leaves
- 1 teaspoon extra-virgin olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Black pepper powder to taste
- Fresh coriander sprigs for garnishing
Method
- Rinse quinoa in water, strain and boil in 1½ cups water for 5-7 minutes. Remove from heat, add 1 teaspoon olive oil and set aside.
- Combine quinoa, tomato, bell pepper, cucumber, chopped coriander in a bowl. Mix well.
- Combine 2 tablespoons olive oil, lemon juice, salt and black pepper powder in another bowl. Mix well and add to salad. Toss to mix.
- Garnish with coriander sprig and serve immediately.
