Ingredients list for Pudina Pulao

  • 1 1/2 cups Fresh Mint Leaves
  • 1 1/2 cups Basmati Rice soaked
  • 3 tablespoons Ghee
  • 2 Bay leaves
  • 3-4 Green cardamoms
  • 1-2 Black cardamoms
  • 4-6 Cloves
  • 8-10 Black peppercorns
  • 1 1/2 tablespoons Ginger paste
  • 3/4 cup Yogurt whisked
  • to taste Salt
  • 3 cups Water

Method

  1. Reserve a few fresh mint for garnish and chop the rest. Heat ghee in a thick-bottomed pan. Add bay leaves, green cardamoms, black cardamoms, cloves and peppercorns and sauté till fragrant. Add ginger paste.
  2. Mix well and stir in yogurt and cook for two to three minutes. Add two and a quarter cups of water and bring to a boil. Add salt.
  3. Drain and add rice. Bring to a boil. Add chopped fresh mint and mix lightly. Cover the pan and cook on low heat for about eight to ten minutes or till rice is completely cooked.
  4. Serve hot garnished with the reserved fresh mint.
