Ingredients list for Prawns with Pineapple
- 15-18 medium Prawns shelled and deveined
- 1/4 medium Pineapple peeled
- 3 tablespoons Oil
- 1 tablespoon Red chilli sauce
- 1 tablespoon Garlic crushed
- 1/2 medium Red capsicum
- 1/2 medium Green capsicum
- 3 tablespoons Oil
- 1 cup Chicken stock
- to taste Salt
- 2 tablespoons Castor sugar
- 2-3 Fresh red chillies
- 1 tablespoon Cornstarch slurry
- 2 teaspoons Vinegar
- 2 tablespoons Fresh coriander leaves roughly chopped
- Pineapple boat for serving
Method
- Cut pineapple into small cubes.
- Heat 2 tbsps oil in a non-stick wok.
- Mix prawns, red chilli sauce and crushed garlic in a bowl.
- Add prawns to the wok, mix well and cook for 4-5 minutes. Transfer them into another bowl.
- Cut green and red capsicum in small pieces.
- Place the same wok on heat, add remaining oil, add capsicum pieces, pineapple cubes, chicken stock, salt and castor sugar.
- Roughly chop red chillies and add to the wok and cook for 4-5 minutes. Add cornstarch slurry and the prawns and mix well. Add vinegar and mix well. Add coriander leaves and mix well and cook till the prawns are done.
- Put the prawns with pineapple into the pineapple boat and serve immediately.
