Ingredients list for Prawns with Chilli Ginger
- 20-24 Prawns (kolambi/jhinga) shelled and deveined
- 2 Birds eye chillies chopped
- 1 inch Ginger finely chopped
- to taste Salt
- to taste Crushed black peppercorns
- 1 tablespoon Oil
- 3-4 Garlic cloves chopped
- 4 Shallots finely chopped
- 2 Lemon grass stalk finely chopped
- 1 cup Vegetable stock
- 1 tablespoon Fresh coriander leaves chopped
Method
- Put prawns in a bowl. Add salt and crushed peppercorns, mix well and set aside for ten to fifteen minutes.
- Heat oil in a non-stick pan. Add garlic, ginger and shallots, mix and sauté for a minute.
- Add chillies and lemongrass, mix and sauté for a minute.
- Add stock, stir and bring to a boil. Add prawns and bring to a boil. Adjust seasoning.
- Add coriander leaves and mix well.
- Serve hot.
