By Sanjeev Kapoor 01 Sep 2016 in Recipes Non Veg New Update Main Ingredients Prawns (medium), Black bean sauce Cuisine Fusion Course Main Course Seafood Prep Time 6-10 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Prawns in Black Bean Sauce 12-15 Prawns (medium) shelled and deveined 4 tablespoons Black bean sauce to deep fry Oil 1 tablespoon + 1 tablespoon Ginger minced 1 tablespoon Garlic minced to taste Salt ½ teaspoon Black pepper powder 1 cup Chicken stock 1 teaspoon Cornflour/ corn starch 1 teaspoon Vinegar 1 Spring onions with greens roughly chopped 1 tablespoon Fresh coriander leaves chopped Method Heat sufficient oil in a wok. Deep-fry prawns till they change colour. Drain on absorbent paper. Heat 1 tablespoon oil in a non-stick pan. Add ginger and garlic and sauté on high heat for a minute. Add black bean sauce and mix well. Add salt and pepper powder and mix well. Add ¾ cup stock, mix and cook. Dissolve cornflour in remaining stock to make a smooth slurry. Add fried prawns to the sauce, mix well and simmer for a minute. Add vinegar and mix well. Add slurry, mix well and cook for 2 minutes or till the sauce thickens. Add spring onion greens, mix well and simmer for a minute.
