Ingredients list for Potato Halwa
- 4 medium Potatoes peeled and grated
- 1/2 cup Milk
- 1/2 cup Sugar
- 3-4 strands Saffron (kesar)
- 1/4 teaspoon Green cardamom powder
- 4 teaspoon Ghee
- 5-6 Cashewnuts chopped
- 1 tablespoon Raisins
Method
- Wash the grated potatoes till the water becomes clear. Drain thoroughly.
- Add milk to the grated potatoes and pressure cook till one whistle. Make a one string consistency syrup with sugar and one-fourth cup of water.
- Remove the scum that rises to the top and discard. Add saffron, green cardamom powder and cooked potatoes to the sugar syrup and cook till a halwa consistency is reached.
- Heat ghee in a small pan and sauté cashewnuts and raisins. Add it to the potato halwa and mix well. Serve hot.
