By Sanjeev Kapoor 06 Apr 2016 in Recipes Course New Update Main Ingredients Potatoes, Milk Cuisine Indian Course Desserts Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Potato Halwa 4 medium Potatoes peeled and grated 1/2 cup Milk 1/2 cup Sugar 3-4 strands Saffron (kesar) 1/4 teaspoon Green cardamom powder 4 teaspoon Ghee 5-6 Cashewnuts chopped 1 tablespoon Raisins Method Wash the grated potatoes till the water becomes clear. Drain thoroughly. Add milk to the grated potatoes and pressure cook till one whistle. Make a one string consistency syrup with sugar and one-fourth cup of water. Remove the scum that rises to the top and discard. Add saffron, green cardamom powder and cooked potatoes to the sugar syrup and cook till a halwa consistency is reached. Heat ghee in a small pan and sauté cashewnuts and raisins. Add it to the potato halwa and mix well. Serve hot.
