Ingredients list for Potato Capsicum Fry

  • 500 grams Potato peeled and diced
  • 1 medium Capsicum seeded and diced
  • 1/2 teaspoon Turmeric powder
  • to taste Salt
  • 3 tablespoons Oil
  • 1/2 teaspoon Cumin seeds
  • 3 medium Onions diced
  • 1 inch piece Ginger deseed and julienne
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Garam masala powder

Method

  1. Boil water in a deep pan. Add half of the turmeric powder, salt and add potatoes.
  2. Cook till potatoes are done. Drain and set aside.
  3. Heat oil in a non stick pan. Add cumin seeds.
  4. Once they crackle, add onions, ginger, garlic and capsicum and sauté till onions are golden brown.
  5. Add potatoes and sauté for two minutes.
  6. Add remaining turmeric powder, chilli powder, coriander powder, salt, garam masala and mix well.
  7. Cover and cook for seven to eight minutes.
  8. Serve hot with roti and parantha.
