By Sanjeev Kapoor 05 May 2016 in Recipes Course New Update Main Ingredients Roasted peanuts, Potatoes Cuisine Indian Course Snacks and Starters Prep Time 11-15 minutes Cook time 6-10 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Advertisment Ingredients list for Peanut Tikki 1/2 cup Roasted peanuts coarsely ground 2 medium Potatoes boiled, peeled and mashed 1/2 cup Corn kernels cooked 1/2 medium Red capsicum finely chopped to taste Salt 1 teaspoon Red chilli powder 1/4 cup Bread crumbs 1/4 cup Fresh pomegranate pearls optional 6 tablespoons Oil as required Sweet tamarind chutney Method Advertisment Mix together the potatoes, corn, red capsicum, salt, red chilli powder and breadcrumbs in a bowl. Divide into eight equal portions and roll into round balls. Stuff each ball with fresh pomegranate pearls. Heat the oil in a non stick pan. Place the coarsely ground peanuts in a plate. Roll the stuffed balls in the peanuts and shape them into tikkis. Place the tikkis in the pan and fry till golden on both sides. Drain onto an absorbent paper. Serve hot with tamarind chutney.
