Ingredients
- 8 eggs
 - 1 medium onion.,finely chopped
 - 1 teaspoon red chilli powder
 - ¼ teaspoon turmeric powder
 - Salt to taste
 - 1-2 green chillies, finely chopped
 - 1 teaspoon ginger-garlic paste
 - 1 medium tomato, finely chopped
 - 2 tablespoons fresh coriander leaves, finely chopped
 - 4 tablespoons ghee
 - Jam to serve
 - Onion quarters to serve
 - 8 pavs to serve
 
Method
- For each omelette, break 2 eggs into a bowl, add ¼ chopped onion, ¼ teaspoon red chilli powder, a pinch of turmeric powder, salt, ¼ chopped green chillies, ¼ teaspoon ginger-garlic paste, ¼ chopped tomato and ½ tablespoon coriander leaves and beat everything well together with a fork.
 - Heat 1 tablespoon ghee in a non-stick pan and pour the omelette mixture into it. Cook for 2-3 minutes or till the underside is done. Flip it over and cook till the other side is similarly done.
 - Fold in half and transfer onto a serving plate. Make more omelettes in the same way.
 - Serve hot with jam, onion quarters and pavs.
