You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Parsi Omelette Recipe

  • Eggs 8

  • Medium onion finely chopped 1

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Green chillies finely chopped 1-2

  • Ginger-garlic paste 1 teaspoon

  • Medium tomato finely chopped 1

  • Fresh coriander leaves finely chopped 2 tablespoons

  • Ghee 4 tablespoons

  • Jam to serve

  • Onion quarters to serve

  • Pavs 8 to serve


Step 1

For each omelette, break 2 eggs into a bowl, add ¼ chopped onion, ¼ teaspoon red chilli powder, a pinch of turmeric powder, salt, ¼ chopped green chillies, ¼ teaspoon ginger-garlic paste, ¼ chopped tomato and ½ tablespoon coriander leaves and beat everything well together with a fork. .

Step 2

Heat 1 tablespoon ghee in a non-stick pan and pour the omelette mixture into it. Cook for 2-3 minutes or till the underside is done. Flip it over and cook till other side is similarly done.

Step 3

Fold into half and transfer onto a serving plate. Make more omelettes in the same way.

Step 4

Serve hot with jam, onion quarters and pavs.
