Parsi Omelette

Fluffy, spiced omelettes with a hint of ginger-garlic and fresh coriander, served with sweet jam and soft pavs. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 8 eggs
  • 1 medium onion.,finely chopped
  • 1 teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • 1-2 green chillies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 medium tomato, finely chopped
  • 2 tablespoons fresh coriander leaves, finely chopped
  • 4 tablespoons ghee
  • Jam to serve
  • Onion quarters to serve
  • 8 pavs to serve

Method

  1. For each omelette, break 2 eggs into a bowl, add ¼ chopped onion, ¼ teaspoon red chilli powder, a pinch of turmeric powder, salt, ¼ chopped green chillies, ¼ teaspoon ginger-garlic paste, ¼ chopped tomato and ½ tablespoon coriander leaves and beat everything well together with a fork. 
  2. Heat 1 tablespoon ghee in a non-stick pan and pour the omelette mixture into it. Cook for 2-3 minutes or till the underside is done. Flip it over and cook till the other side is similarly done.
  3. Fold in half and transfer onto a serving plate. Make more omelettes in the same way.
  4. Serve hot with jam, onion quarters and pavs.
