Paprika Chicken with Roasted Potatoes

Ingredients list for Paprika Chicken with Roasted Potatoes

  • 250 grams Boneless chicken
  • 10-12 Baby potatoes with skin
  • 3 teaspoons Paprika
  • to taste Sea salt
  • for shallow frying Oil 2½ teaspoons +
  • 2-3 Fresh rosemary
  • to taste Salt
  • to taste Crushed black peppercorns
  • 2 teaspoons Garlic chopped
  • 1½ teaspoons Red chilli sauce
  • 6-7 Thyme sprigs
  • for garnishing Fresh parsley

Method

  1. Preheat oven to 180° C.
  2. Place potatoes in a bowl. Add sea salt, 1½ teaspoons oil and rosemary sprigs and toss. Spread them on a baking tray and roast in the preheated oven for 8-10 minutes.
  3. Cut chicken into thick strips and put in a bowl. Add salt, crushed peppercorns, paprika, garlic, chilli sauce and thyme sprigs and mix well. Add 1 teaspoon oil and mix well. Set aside to marinate for 10-15 minutes.
  4. Heat some oil in a non-stick grill pan.
  5. Skewer marinated chicken strips onto satay sticks.
  6. Place the sticks in the pan and grill on medium heat till golden and evenly done from both sides.
  7. Place roasted potatoes on one side of a serving plate. Place chicken on the satay sticks on the other, garnish with chopped parsley and serve immediately.
