By Sanjeev Kapoor 31 Mar 2017 in Recipes Course New Update " frameborder="0" allowfullscreen> Main Ingredients Potatoes, Eggs Cuisine Parsi Course Main Course Egg Prep Time 6-10 minutes Cook time 26-30 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Papeta par Eeda 2 medium Potatoes peeled and soaked in water, 4 Eggs 2 tablespoons Oil ½ teaspoon Cumin seeds 3 medium Onions finely chopped 1 medium Tomato finely chopped to taste Salt 2 Green chillies finely chopped a few Fresh coriander leaves chopped Method Heat oil in a non-stick pan. Cut potatoes into thin slices. Add cumin seeds and onions to the pan and sauté till the onions turn brown or for 5-7 minutes. Add tomato, salt, mix well and cook till tomato turns soft. Add green chillies and mix well. Add potato slices, spreading all over the pan and cook on low heat till potatoes are almost done. Lower heat, break eggs one by one onto the potatoes. Sprinkle salt and chopped coriander on top, cover and cook for 5 minutes. Serve immediately.
