Ingredients list for Papeta par Eeda
- 2 medium Potatoes peeled and soaked in water,
- 4 Eggs
- 2 tablespoons Oil
- ½ teaspoon Cumin seeds
- 3 medium Onions finely chopped
- 1 medium Tomato finely chopped
- to taste Salt
- 2 Green chillies finely chopped
- a few Fresh coriander leaves chopped
Method
- Heat oil in a non-stick pan.
- Cut potatoes into thin slices.
- Add cumin seeds and onions to the pan and sauté till the onions turn brown or for 5-7 minutes.
- Add tomato, salt, mix well and cook till tomato turns soft.
- Add green chillies and mix well. Add potato slices, spreading all over the pan and cook on low heat till potatoes are almost done.
- Lower heat, break eggs one by one onto the potatoes. Sprinkle salt and chopped coriander on top, cover and cook for 5 minutes.
- Serve immediately.
