Ingredients
- 4 mini pizza bases
- ¼ cup sweet corn kernels, boiled
- ½ small yellow capsicum, finely chopped
- ½ small red capsicum, finely chopped
- ½ small green capsicum, finely chopped
- 150 grams paneer (cottage cheese), cut into small cubes
- 2 tablespoons veg mayonnaise
- 30 grams processed cheese
- 1 teaspoon red chilli flakes
- 1 teaspoon dried mixed herbs
- Salt to taste
- 1 teaspoon paneer masala
- Butter as required
- Green chutney as required
- Tomato ketchup to serve
Method
- To make stuffing, take sweet corn in a large bowl, add yellow capsicum, red capsicum, green capsicum, cottage cheese and vegetarian mayonnaise. Grate cheese into the bowl, add red chilli flakes, mixed herbs, salt and paneer masala and mix well.
- Halve the pizza bases horizontally and apply butter and green chutney on the cut sides of all the halves. Spread a portion of the stuffing on one side of each pizza base and cover it with the other.
- Heat a griller, apply a little butter on top of each sandwich and place it on the griller. Grill till golden brown and crisp on both sides.
- Arrange them on a serving platter and serve hot with tomato ketchup and green chutney.
