Paneer Khurchan

‘Khurchan’ literally translates to scraping. Here, paneer is cooked with onion, tomatoes and other spices with the flavours scraped and mixed till well done. A popular one from North India. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 400 grams paneer (cottage cheese)
  • 2 tablespoons oil
  • 2 teaspoons cumin seeds
  • 2 medium onions, finely chopped
  • 1 1/2 tablespoons ginger-garlic paste
  • 1/2 cup tomato puree
  • 2 tablespoons paneer masala
  • Salt to taste
  • 1 large onion, cut into thin strips
  • 2 small tomatoes, seeded and cut into thick strips
  • 3/4 cup mixed colored capsicums strips
  • 4 teaspoons butter
  • 1/2 teaspoon dried fenugreek leaves (kasuri methi) powder
  • Fresh coriander sprigs for garnish

Method

  1. Heat oil in a wide shallow non-stick pan, add cumin seeds and saute till they change colour. Add onions and mix well. Cook till they turn golden brown.
  2. Meanwhile, cut cottage cheese into thick strips.
  3. Add ginger-garlic paste to the pan and saute. Add a little water so that the masala does not burn and continue to saute for 1-2 minutes or till raw smells disappear.
  4. Add tomato puree, mix well and saute till the oil separates.
  5. Add Tata Sampann Paneer Masala and mix well. Add salt, ¼ cup water, mix well and cook for 2 minutes.
  6. Add onion, tomatoes, mixed colored capsicums and toss well.
  7. Add cottage cheese strips and mix gently. Cook till the cottage cheese strips are slightly crisp on the outside, mixing gently occasionally.
  8. Add butter and sprinkle dried fenugreek leaves powder. Mix gently and take the pan off the heat.
  9. Transfer the prepared mixture into a serving bowl, garnish with coriander sprig and serve hot.
