Paneer Kadai

An excellent example of kadai cooking. Cottage cheese cooked with whole Indian spices and assorted capsicums. This is a Sanjeev Kapoor exclusive recipe.

  • 200 grams cottage cheese (paneer)
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 tablespoon ginger-garlic paste
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1/2 cup tomato puree
  • 1 1/2 teaspoons kadai masala
  • 1/2 teaspoon chilli powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon dried fenugreek leaf (kasuri methi) powder
  • Salt to taste
  • 1 medium onion, cut into cubes and layers separated
  • 1 small green capsicum, cut into cubes
  • 1 small red capsicum, cut into cubes
  • 1 tablespoon fresh cream
  • Chopped fresh coriander leaves for garnish 
  • Ginger strips for garnish


  1. Heat oil and butter in a non-stick pan. Add ginger-garlic paste and sauté till fragrant.
  2. Add onions and sauté till lightly browned. Add tomatoes and tomato puree, mix and cook till the tomato softens.
  3. Add kadai masala, chilli powder, turmeric powder, coriander powder and garam masala powder and mix well.
  4. Add some water and mix well. Add dried fenugreek leaves powder and mix well.
  5. Add salt, some more water, onion, green and red capsicum, mix and cook for 1-2 minutes.
  6. Add cream and mix well. Add cottage cheese cubes, mix and cook for a minute.
  7. Garnish with coriander leaves and ginger strips and serve hot.
