Pan Fried Vegetable Momos

Ingredients
- ½ cup chopped spring onion bulbs
- ½ cup chopped French beans
- ½ cup grated cabbage
- ½ cup grated carrot
- ¼ cup chopped spring onion greens
- 1 cup refined flour (maida) + for dusting
- Salt to taste
- 3 tablespoons light soy sauce
- 1 inch ginger, cut into thin strips
- 1 tablespoon white sesame seeds
- 1 tablespoon oil
- 1½ tablespoon chopped garlic
- ½ tablespoon chopped ginger
- White pepper powder to taste
- Soy ginger sauce for serving
Method
- Put 1 cup flour in a bowl. Add salt and sufficient water, mix and knead into a semi-soft dough. Cover with a damp cloth and set aside for 1 hour.
- To prepare sauce, heat a non-stick pan. Add soy sauce and bring to a boil. Add ginger strips, sesame seeds and salt, mix and cook for 4-5 minutes. Remove from heat and set aside.
- Heat 1 tablespoon oil in another non-stick pan. Add garlic and chopped ginger and sauté for 1 minute.
- Add spring onion bulbs, French beans, cabbage, carrot, spring onion greens and pepper powder, mix and cook for 2-3 minutes. Remove from heat and set aside to cool.
- Dust the worktop with some flour, place a portion of the dough on it and roll out into a large thin disc. Cut out circles from it using a medium size cookie cutter.
- Place a portion of the cooked vegetable mixture in the centre of each circle, bring the edges together and pinch to shape into momos.
- Heat remaining oil in a pan. Place the momos, sprinkle some water on top, cover and cook for 3-4 minutes.
- Serve hot with soy ginger sauce.
