Fundamentally an aromatic marriage of centuries – old Eastern and Western influences, the chief characteristics being who cooks it, for whom it is cooked, for what occasion and where it is cooked. In short Thai dishes can be extremely personal to the cook, how they are refined for particular tastes, how they befit a special function or festival and where they originate. The cuisine has its roots in a waterborne lifestyle, with aquatic animals, plants and herbs as major ingredients.
Thai cuisine is inextricably interwoven with culture, a mystical mix of fragrant flavours and intriguing history:  given the country’s historical Indian roots - Hindu Buddhism was bought here centuries ago, so many Thai curries are redolent with chillies, garlic, cardamom, cloves, cinnamon, and onions.

Ingredients for Pad Thai Yum Yum Noodles Recipe

  • Flat noodles boiled 200 grams

  • Bean spouts seeded 1/2 medium

  • Oil 2 tablespoons

  • Spring onions chopped 5-6

  • Garlic chopped 5-6 cloves

  • Broccoli 5-6 florets

  • Button mushrooms sliced 6-8

  • Yellow capsicum seeded 1/2 medium

  • Green capsicum seeded 1 small

  • Carrots thin strips 2 medium

  • Salt to taste

  • Soy sauce 1 teaspoon

  • Brown sugar 2 tablespoons

  • Fresh red chilli diagonally sliced 1

  • Spring onion greens chopped 1 stalk

  • Roasted peanuts coarsely ground 3 tablespoons

  • Lemon juice 1 tablespoon

  • Bean sprouts 1/2 cup

Method

Step 1

Heat oil in a pan.

Step 2

Add onion, garlic, broccoli, mushrooms, three coloured capsicums and carrots and toss. Add noodles, salt, soy sauce, brown sugar and toss some more. Add fresh red chilli and toss again. Add spring onion greens and most of the roasted peanuts and toss.

Step 3

Transfer into a serving dish. Add lemon juice and bean sprouts.

Step 4

Top with the remaining roasted peanuts and serve hot.
