One Pot Pasta with Chicken

A hearty bowl of farfalle pasta tossed with spiced chicken mince, colorful veggies, and a light herbed broth for a comforting one-pot meal. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 200 grams chicken mince
  • 1 cup farfalle pasta, boiled
  • 2 tablespoons olive oil
  • 1 tablespoon chopped garlic 
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 medium onion, finely chopped
  • 1 medium carrot, cut into ½ cm small cubes
  • ½ medium red capsicum, cut into small pieces
  • ½ medium green capsicum, cut into small pieces
  • ½ medium yellow capsicum,cut into small pieces
  • 1 teaspoon dried oregano
  • 3 cups chicken stock
  • 2 tablespoons tomato ketchup

Method

  1. Heat 1 tablespoon olive oil in a small non-stick deep pan. Add ½ tablespoon garlic and sauté till golden. Add chicken mince, salt and crushed peppercorns, mix and cook till chicken is done. Transfer into a bowl.
  2. Heat remaining olive oil in the same small non-stick deep pan. Add remaining garlic and sauté till golden. Add onion and sauté till translucent.
  3. Add carrot, red capsicum, yellow capsicum, green capsicum, salt, crushed peppercorns and dried oregano, mix and cook for 1 minute.
  4. Add pasta and mix. Add chicken stock and mix. Cover and cook for 1 minute.
  5. Add cooked chicken and tomato ketchup, mix, cover and cook for 1 minute.
  6. Serve hot.
