Ingredients list for Mushroom Popcorn

  • 16-20 small Button mushrooms stemmed and quartered
  • 1 teaspoon Onion powder
  • to taste Salt
  • a pinch Paprika
  • to taste Crushed black peppercorns
  • 2 teaspoons Ginger-garlic paste
  • 2 teaspoons Lemon juice
  • ½ cup Refined flour (maida)
  • for deep-frying Oil
  • 1 cup Bread crumbs panko

Method

  1. Put mushrooms in a bowl. Add onion powder, salt, paprika, crushed peppercorns, ginger-garlic paste and lemon juice and mix well. Set aside to marinate for ten to fifteen minutes.
  2. Put half the flour in another bowl. Add salt and some water and whisk to make a thick slurry.
  3. Heat sufficient oil in a pan.
  4. Dust the marinated mushrooms with the remaining flour, dip in the slurry and coat with breadcrumbs.
  5. Deep-fry the mushroom popcorns in hot oil till golden and crisp. Drain on absorbent paper.
  6. Serve hot.
