Ingredients list for Mix Vegetable Curry for Infants
- 2 Potatoes peeled and cut into ½ inch cubes
- 2 Small brinjals cut into ½ inch cubes
- 1 Tomato cut into ½ inch cubes
- 1 Arbi peeled and cut into ½ inch cubes
- to taste Salt
- 1/2 teaspoon Turmeric powder
- 2 tablespoons Oil
- 1/2 teaspoons Mustard seeds
- 1 medium Onion chopped
- 4 Garlic cloves crushed
Method
- Pressure cook vegetables with salt and turmeric powder and sufficient water till pressure is released twice.
- Heat oil in a non-stick pan. Add mustard seeds. Once they start to splutter, add the onion, garlic and sauté till onion turns golden brown. Add the vegetable mixture and cook for 5 minutes.
- Mash the vegetables lightly.
- Serve hot.
