How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Mexican Rice-SK Khazana Recipe

  • Rice 1 1/2 cups

  • Chipotle sauce 1 tablespoon

  • Oil 1 tablespoon

  • Garlic chopped 1/2 tablespoon

  • Medium onion finely chopped1 to cook

  • Tomato puree 1/2 cup

  • Medium carrot cut into small cubes 1

  • Green peas 1/4 cup

  • Three coloured capsicums Finely chopped 3 tablespoons

  • Lemon juice 1/2 tablespoon

  • Salt to taste

  • Black peppercorns to taste

  • Vegetable stock 3 cups

  • Mexican spice to sprinkle

Method

Step 1

Heat oil in a deep non-stick pan. Add rice and sauté for a minute.

Step 2

Add garlic, mix and sauté for a minute. Add onion, mix and sauté for 2-3 minutes.

Step 3

Add Chipotle sauce and mix. Add tomato puree, mix and cook for 1 minute. Add carrot, peas, mixed capsicums and lemon juice, mix and cook for 2-3 minutes.

Step 4

Add salt and crushed peppercorns and mix well. Add stock, mix, cover and cook till done.

Step 5

Sprinkle Mexican seasoning and serve hot.
