Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Masaledar Besan Ki Roti Recipe

  • Bengal Gram 1 cup

  • Wholewheat Flour 1/2 cup

  • Cumin powder 1 1/2 teaspoons

  • Turmeric powder 3/4 teaspoon

  • Red chilli powder 3/4 teaspoon

  • Dry mango powder (amchur) 1 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons

  • Salt to taste

  • Oil 1 1/2 tablespoons

  • Ghee 4 tablespoons

Method

Step 1

Mix together all the ingredients together except ghee and add enough water to knead into a soft dough. Divide into 6 parts. Roll out each part into a chappati, fold into half and again into half to make a triangle.

Step 2

Roll out again to make a triangular roti. Heat a tava and fry each roti with a little ghee till both sides are well done. Apply a little ghee and crush with your hands. Serve hot.
