The Marwari vegetarian food again comes in two varieties i.e. the food eaten by the common man that includes use of various spices and herbs and the food of the Marwari Jains that is prepared without using onions, garlic or for that matter any ingredient growing under the soil except for ginger and groundnuts.
Marwari vegetarian cooking has its own unique flavour where the simplest and the most basic of ingredients go into the preparation of most of the dishes. There are some specific reasons for the use of some specific ingredients. The harsh climate plus the non-availability of a lot of ingredients have shaped the traditional cuisine.

Ingredients for Masala Khichiya Papad Recipe

  • Papad khichiya, readymade 4

  • Oil for deep-frying

  • Butter ½ tablespoon

  • Red chilli-garlic chutney 1 tablespoon

  • Green chutney as required

  • Onion chopped 1 medium

  • Tomato chopped 1 medium

  • Fresh coriander leaves chopped as required

  • Chaat masala to sprinkle

Method

Step 1

Heat sufficient oil in a kadai.Deep-fry papads till they puff up. Drain on absorbent paper.

Step 2

Heat butter in a non-stick pan. Add red chilli-garlic chutney and sauté for a minute. Transfer into a bowl.

Step 3

Spread some butter-chutney mixture and green chutney on each fried papad. Put some onion, tomato and coriander leaves on top. Sprinkle some chaat masala on top.

Step 4

Serve immediately
