Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for MUSHROOM MANCHURIAN - skk Recipe

  • Button mushrooms stems discarded 12-16

  • Oil 1 tablespo to deep fry

  • Refined flour 1/2 cup

  • Cornflour 1/4 cup

  • Ginger-garlic paste 1 tablespoon

  • Salt to taste

  • Garlic chopped 1 tablespoon

  • Ginger finely chopped 1 inch

  • Green chillies finely chopped 1-2

  • Spring onion stalks chopped 1-2

  • Tomato ketchup 1 tablespoon

  • Soy sauce 1 teaspoon

  • Cornflour slurry 1 tablespoon

  • Vinegar 1 teaspoon

  • Spring onion greens sliced 1 tablespoon

Method

Step 1

Heat sufficient oil in a kadai.

Step 2

Take refined flour in a bowl, add cornflour, ginger-garlic paste, salt and sufficient water and whisk to make a smooth and semi-thick batter.

Step 3

Add button mushrooms and mix till they are well coated. Slide them, a few at a time, into hot oil and deep-fry till crisp. Drain on absorbent paper.

Step 4

Heat 1 tablespoon oil in a non-stick pan, add garlic and ginger and sauté till raw smells disappear.

Step 5

Add green chillies and sauté for 30 seconds. Add spring onions and sauté for 1 minute. Add ¼ cup water and mix. Add tomato ketchup and soy sauce and mix well.

Step 6

Add cornflour slurry, mix and cook till the mixture thickens.

Step 7

Add fried mushrooms and vinegar and mix. Add salt and 1 tablespoon spring onion greens and mix well.

Step 8

Transfer into a serving bowl and serve hot.
