History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.

Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for MASALA CHAI - skk Recipe

  • Tea leaves 2 tablespoons

  • Green cardamoms 8-10

  • Cinnamon 1/2 inch

  • Cloves 5-6

  • Black peppercorns 5-6

  • Fennel seeds 1 teaspoon

  • Ginger 1/2 inch small bunches

  • Sugar 4 tablespoons

  • Milk 1 cup

Method

Step 1

Put green cardamoms, cinnamon, cloves, black peppercorns and fennel seeds in a mixer jar and grind to a fine powder.

Step 2

Crush ginger in a motor with a pestle.

Step 3

Heat 2 cups water in a pan till it comes to a boil, add tea leaves, crushed ginger, sugar and 1 teaspoon ground masala, mix well and let it boil for 3-4 minutes. Add milk and bring it to a boil again.

Step 4

Strain into serving cups and serve hot.
