Ingredients
- 8-10 golden apricots
- 2 tea bags
- 4-6 tablespoons brown sugar
- 4 green cardamoms
- 2 inch cinnamon
- Fresh mint sprigs for garnish
- Cookies for serving
Method
- Roughly chop the apricots.
- Heat a non-stick pan, add chopped apricots, brown sugar and 4 cups water and mix well.
- Once the mixture comes to a boil, break open the green cardamom pods and add to the pan. Add cinnamon, mix and cook on medium heat for 6-8 minutes or till apricots turn soft.
- Discard the green cardamoms and cinnamon. Strain the mixture through a fine sieve into a jar.
- Transfer the cooked apricots into a blender jar and grind to a fine paste.
- Dip tea bags into the stock in the jar and let the flavour infuse for 1 minute.
- Add a spoon of ground apricot mixture into each of 4 individual cups and pour the tea mixture over.
- Garnish with mint sprigs and serve hot with cookies.
