Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Low Calorie Carrot Pickle Recipe

  • Red carrots , peeled and thickly grated 2 large

  • Dried red chiliies 10-12

  • Mustard seeds ¼ cup + ½ teaspoon

  • Oil 2 tablespoons

  • Fenugreek seeds (methi dana) 1/4 teaspoon

  • Asafoetida 1/4 teaspoon

  • Salt to taste

  • Lemon 1 large

Method

Step 1

Put red chillies in a grinder jar, add ¼ cup mustard seeds and grind.

Step 2

Heat oil in a pan, add ½ tsp mustard seeds, fenugreek seeds and asafoetida and saute till the seeds splutter.

Step 3

Add carrots and mix well. Add salt and mix. Switch off heat.

Step 4

Add 2 tbsps of the ground mixture and mix well. Squeeze juice of ½ lemon and mix.

Step 5

Cool and store in a bottle. After a day keep it in the refrigerator. It will keep upto 2 weeks.

Step 6

Serve.
